The paper describes the application of a fundamentally new measurement technology for food characterization and process monitoring. This on line, nonintrusive technology can be used to monitor composition and molecular changes. Examples will be given from various industries including sugar, grain processing, vegetable oil, dairy, fruit juice, and animal protein. Applications include blending, composition verification, hydration/dehydration, hydrolysis, and molecular transformations. The advantage over previous technologies include real time, high resolution, full stream process monitoring through 1 to 3 inch diameter pipe sections.

Analytical Electron Microscopy (AEM) has been used to characterize the microstructural evolution of thermally evaporated Ti films on single-crystal LiNbO3substrates. The microstructural evolution exhibits three primary stages: Ti oxidation which is initially observed at 370°C and is essentially complete by ~500°C; formation of a two-phase microstructure of TiO2and LiNb3O8at ~800°C which grows epitaxially with respect to the LiNbO3substrate; eventual diffusion of both phases occurs at 1000°C to leave only a Ti:LiNbO3solid solution. © SPIE.

The basic principles of Transmission Electron Microscopy are outlined and examples of microstructures observed in LiNbO3, waveguides reported. Defects present in the waveguides may have significant effects on their waveguiding ability. Various speculative arguments are suggested for the influence of these defects on the waveguide. © 1987, SPIE.

The microstructures of proton-exchanged LiNbO//3 and of Ti-diffused LiNbO//3 optical waveguides were examined in the transmission electron microscope (TEM). It was found that TEM examination can be used to study the microstructures of optical waveguides and indicate the types of defect(s) responsible for loss of waveguiding ability.
