When you click 'Save', the file is written (or re-written) to the computer's permanent memory, the hard drive, using binary code.
The code represents not only the letters but also the formatting commands: spaces, line breaks, pages and so on.
Sometimes the computer also creates autosaved drafts, saved regularly as the document changes, which can appear as backup files.
