John says: A wonderful little vegan pudding made from naturally sweet fermented rice.
Ingredients:
- 2x Plums
- 1 Tbsp Caster Sugar
- ½ Lemon
- 190g Amazake
- 190g Vegan Yogurt
- 20g Ground Pistachios
- 10g Micro Lemon Balm
Directions
- Cut the plums in half & dice up into 5mm chunks, toss in sugar & juice of half lemon.
- Roast in a oven at 175 degrees for 8 minutes until caramelized, allow to rest
- In a blender, Whip the Amazake & Yogurt together until a pudding consistency is reached, pour into 4 pots & chill in the fridge for 1 hour.
- Once chilled, top the amazake pudding with a dollop of roasted plums, a sprinkle of pistacchio & a few leaves of lemon balm.
