Prep time: 5 mins​ plus 1 hour chilling time | Cook time: 8 mins | Serves 4

John says:  A wonderful little vegan pudding made from naturally sweet fermented rice.

 

Ingredients:

  • 2x Plums
  • 1 Tbsp Caster Sugar
  • ½ Lemon
  • 190g Amazake
  • 190g Vegan Yogurt
  • 20g Ground Pistachios
  • 10g Micro Lemon Balm

 

Directions

  1. Cut the plums in half & dice up into 5mm chunks, toss in sugar & juice of half lemon.
  2. Roast in a oven at 175 degrees for 8 minutes until caramelized, allow to rest
  3. In a blender, Whip the Amazake & Yogurt together until a pudding consistency is reached, pour into 4 pots & chill in the fridge for 1 hour.
  4. Once chilled, top the amazake pudding with a dollop of roasted plums, a sprinkle of pistacchio & a few leaves of lemon balm.
